These are my thoughts on avocado: Since we moved to California, we've been eating it non-stop and we absolutely looooove it. We have it every single meal, with rice, with beans, with quinoa, with sourdough bread and also with maple syrup or honey, yes sweet avocado is a must. I even cook an amazing vegan chocolate mousse with avocado and banana, recipe soon!
FACTS: Avocados are not only rich in healthy mono-saturated fats, but they are packed with fiber, vitamins and minerals, including potassium, copper, B vitamins and vitamins K, E and C.
